is how you make Fudge Puppies (Belgian Waffles on a Stick):
The Dip-Stick, a Belgian Waffle on a stick, is made in the #5044
Waffle Baker - however you use the Belgian Waffle Mix. Fill
each of the five cavities level with batter - quickly place the
five skewers in position quickly close the lid - roll it over and
cook for 3 minutes.
Remove the five "Dip-Sticks" and repeat the cooking process. You should get over 70 pieces per hour with one Baker - over 150 per hour with two. Place the Belgian Waffles on a wire rack to cool a little. Keep air space between them so they stay crisp.
As the waffles cool, dip them in Gold Medal's high temp Chocolate Dip. Because you have a round stick, you can "spin off" the excess chocolate in the "cylinder" and hold the coating to approximately one ounce per waffle. You can also use a Double Warmer for convenience, one side to dip, the other for the spin off.
The display case really helps merchandise the Fudge Puppies by making a good presentation. The standard model #5530 is a display case with lexan sides, a lexan top, stainless steel header and bottom. The dip pans revolve when the motor is turned on. The # 5536 is a motorized, heated and lighted display case which looks the same as the #5535, but is heated as well. Choose the case you think will work best in your location.
Note that once a "Stick Waffle" is chocolate coated, you can roll it in granulated peanuts or sprinkles once it has drained and starts to cool. Be creative, the better you dress your Fudge Puppies the more you can sell it for.
Also, once these have cooled you can stack them between layers of wax paper- even at room temperature. (After all, the Chocolate coating "seals up" the Waffle completely much the same way a Chocolate Coated Cookie is sealed up.) Because these are so delicious, it is important to make up plenty ahead of any expected bust sales period.
If you want to "freeze" or refrigerate, that's okay - sometimes on hot days, a cooler confection will sell better.
Make the "Dip Stick" in the Model #5044 Baker, is a high production, high "valued Perceived" type of fun food.
You could call these "Swiss Chocolate Waffles" or "German Chocolate Waffle" - it depends on whether you are working at Oktoberfest or some other specialty event. In making these "Dip-Sticks" make sure that you use a light spray of "Seas N' Kleen" every once in a while to make sure that the waffles release easily.
