Caramel Popcorn - Getting Started:
Caramel popcorn is a two step process, which requires first popping the corn and then caramelizing (coating the popped corn with caramel). Once the corn has been coated it will need to cool and be separated prior to bagging or serving. In order to properly and efficiently make Caramel Popcorn, the minimum equipment requirement would be a popcorn popper, a corn treat cooker mixer unit (caramelizer), plus a cooling area (either a cart / pre-fabricated or custom table will be needed) - we recommend using our cooling rack cart. We also suggest that you purchase a high quality candy scale so you can accurately weigh the servings.
A more elaborate caramel corn operation would consist of a large popping plant (or two) and at least two or more caramelizers - plus popcorn warmer or display case. With this high capacity operation we would recommend a number of display units in which to store and merchandise your products. Profit margins on caramel corn can be higher than 80% with the right equipment and supplies.
Easy Steps To Making Caramel
Corn (as recommended by Gold Medal Products):
Based on using Mark 10 caramelizer cooker mixer that produces 10-lbs. batch.
Pop 10 gallons of corn in a popcorn popper.
Load a 22 oz. pouch of concentrated mix into the Corn Treat Cooker Mixer plus four cups of regular sugar.
Add four ounces of shortening (popping oil for example) plus one cup of water. Turn on heat switch and put on the lid.
When the steam comes out, remove the lid.
When the buzzer sounds, add at least one stick of butter, plus a 5-gallon measure of popcorn.
Turn heat off and motor on. Add about 10 squirts of Free 'N Easy as the corn mixes. Slightly tilt up the kettle and add 10 more squirts-when it looks evenly coated, empty the candy corn into the cooling pan and repeat the cooking process. Separate Caramel Corn. Do not pack corn while it is still hot.
CARAMEL CORN FORMULA: POP + COAT + COOL + SEPARATE + SERVE = CARAMEL CORN
A typical caramel corn equipment set-up is listed below consisting of a 36 ounce popcorn popper, 10-lbs. cooker mixer and cooling table. Production of up to 720 ounces of popcorn and 40-lbs. of caramel corn per hour is possible with this setup. This basic setup would work well for small-mid sized production facility.
