Aluminum kettles will cook a 10 lb batch in half the time of copper. These larger stoves are used almost exclusively by carnies for high volume candy apples. They heat the apple mix up to 290 degrees; turn the heat off and start dipping apples. There is no need for an adjustable temp control.
